Tobes and I have decided to have our try at Meatless Monday. We like to eat some veggie meals each week, but as I try to get back into meal planning for dinners, it makes it easier to schedule it in.
Tonight I made
this. It was delicious and VERY easy to make. I had most of the ingredients already in the cupboard and fridge- I just picked up some turmeric on the way home and swapped over the cayenne for paprika. Apparently it freezes very well, but Tobes already has dibbs on the leftovers for lunch tomorrow, and I'll have the rest on Wednesday. Yum!
Yum! This looks really good! I might just have to make some. I haven't had anything "curry" in awhile, and now I'm craving it!
ReplyDeleteOh. My. Word. It looks delicious! If we didn't have some fabulous left over Chinese food waiting in the fridge for tonight, I'd be all about this recipe! I'm a die hard chickpea fan, so this recipe is definitely getting printed out and filed in the cupboard.
